"Stefano Fiori is the proprietor of Fino's Orangery in the Exchange Tower, where he provides business lunches for much of Docklands. We caught up with him late in the afternoon, after a particularly busy lunchtime to find out more about this seasoned restaurateur.

How long have you been in the hospitality industry?
30 years. Been here for 11 years, since it opened.

Where do you think the London hospitality scene is headed?
It's not good at the moment, what with the troubles in Afghanistan and America. There's no tourism, because there's no Americans this year.

Where does your establishment fit in?
Business lunches.

What's your favourite London restaurant?
Seraphino in Mount St.

If you were to hold your ideal dinner party, which four people would you invite and why?
Gianluca Vialli; I've always wanted to meet him.

What would you serve and why?
Traditional Italian food.

What's the one thing that gets up your nose in bad restaurants?
Amateurish service.

What do you think of the celebrity chef phenomenon?
Makes great (and very cheap) TV, but that's about it.

What would you do if you weren't in the hospitality industry?
Couldn't imagine not being in it. I've actually been working in it for longer than 30 years - I started helping my Dad out in the kitchen from the age of 10.

What are the three things that make a restaurant or bar successful in London?
Good food, good service and the right price.
